Your schedule has never been more hectic. Your time, never more crunched. You have fewer opportunities to eat a healthy breakfast than ever before, but you've never needed it more. Here are some tips and recipes to make sure you start with a healthy breakfast that keeps you going throughout your busy day.
Many egg recipes are fast and easy to prepare, and eggs contain vitamins, minerals and essential nutrients that give you energy. Coffee Cup Scramble and Microwave Egg and Cheese Breakfast Burrito are two fast and delicious egg recipes. Save even more time on breakfast by making a week's worth of Hard-Cooked Eggs on Sunday, then just grab-and-go.
"Breakfast meals should always include a source of protein to help keep blood sugar levels on an even keel throughout the morning and avoid the urge for a 10 a.m. donut break," says Carolyn O'Neil, registered dietitian and co-author of The Dish on Eating Healthy and Being Fabulous! She likes to include lean beef as a healthy breakfast option, often as an ingredient in a quick and easy breakfast beef burrito.
One way to make sure you eat healthy on the go is to prepare breakfast in advance, says Mary Hartley, RD, MPH and director of nutrition for Calorie Count. "Bake on the weekends and freeze portions in individual containers." Two of Hartley's recommended make-ahead recipes are Pear and Walnut Muffins and Low-Fat Applesauce Oatmeal Pancakes. "Individual pancakes are easy to freeze," she adds. "Nuke ever-so-slightly to reheat."
Judy Penta, Patients Medical Nutritionist, agrees with the "plan-ahead" approach for a healthy breakfast. "Get clear about what you're going to have for breakfast the night before so you don't have to think about it the next day."
And don't forget to include three important ingredients in your morning meal, says Felicia Stoler, registered dietitian and healthy living expert. "When you eat breakfast you should always have something with carbohydrates, protein, and fats (fats from nuts, and flax seeds are healthy options). Eating foods with these nutritional factors keep you full longer." Kashi's GOLEAN! Cereal offers a variety of healthy, quick breakfast recipes that include these ingredients, like Whole Wheat Crepes with Greek Yogurt, Banana-Cocoa Soy Smoothie, and Heart to Heart Waffle "Bruschetta" With Roasted Heirloom Tomatoes & Greens.
But why go to all the trouble? Isn't it easier to save time and skip breakfast?
Kristin Kirkpatrick, RD, LD, MS, registered dietitian for the Lifestyle 180 program at Cleveland Clinic says a healthy breakfast isn't just important to your day, but also for your overall, ongoing health. "Breakfast eaters are better able to manage their weight. They consume higher quality calories throughout the day and tend to eat more frequent smaller meals and snacks. Research has shown that children who consume breakfast have higher levels of concentration in school and perform better on tests. Breakfast clearly effects our energy, our mind, our weight and our daily food choices."
